I REALLY Needed a Win

As I really had barely any ingredients in order to bake today I did a recipe that I am actually familiar with. Plus, with the complete and utter failure from yesterday I REALLY needed a win. Also, I have yet to go shopping to get supplies to be able to bake any other recipe from my mom's cookbook. As I have found I have no baking or cooking supplies of any kind. With 2 toddlers in the house I am lucky if I get a shower every day, so let's give me a break okay. Alright so here is day 2.
Danish Pancakes (Crepes)
Recipe
  • per person
  • 1 egg
  • 1/4 cup milk
  • 1/4 cup flour
  • a pinch of salt
  • butter
    • melt butter in frying pan
    • heat the pan on "medium high"
    • pour batter into pan into a thin layer
    • flip when edges start to "curl" a little
    • let the pancake cook until edges begin to "curl" again
    • best if served with butter, sugar, jelly, or powdered sugar
Okay you can just go ahead and call me "crazy organized lady" now.


I don't think you can see the edges of the pancake curling, but that is what I was hoping to capture in this photo.


They turned out delicious!!!!


My extremely picky toddlers were really not a fan. This is not surprising though, since lately if it is not in a tortilla or toast they have no interest to consume it. No leftovers remained! I had at least four and my husband added eggs (as he does any breakfast food) and really enjoyed them.

Things I've Learned

  • I LOVE recipes that are simple with few ingredients. These tasted amazing and had half the ingredients needed to make the muffins yesterday.
  • Once I know a recipe pretty well I can tweak it a little with minimal fear of totally ruining it!
  • I can cook! I just need the supplies (and maybe a little more confidence) in order for the food to be edible!
  • Doing cooking prep directly next to a sink makes life way easier!!!!
A day of my husband having to beg for food avoided!


Getting Fat for the New Year

I don't typically do the whole "New Year's Resolution" thing, but this year my goal is to get fat. Okay it is not really my goal to get fat, but it is my goal to learn how to cook which may make me fat. :-\ However, my first attempt to make muffins went pretty horribly wrong, so it may go the other way and I may starve in the end.
First, I decided January I am going to learn how to make simple breakfast foods.

Muffins 
Muffins Recipe
  • 1 egg
  • 2 tsp. baking powder
  • 1/2 cup milk
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1/2 tsp. salt
  • 1/4 cup oil
    • Cream together egg, oil, sugar, and milk. Add remaining ingredients and mix well. Scoop into greased muffin tin and bake at 400 degrees for 20 minutes.
I am a very organized person, so I like to have everything out and ready to go before getting started.


It was faster to mix than I expected.



Eh... they looked okay.

Libby and I did not like them!



She was quick to tell me she was done.

... and into the trash they went!!!!



Madison did finish one though. :-/



Luckily these girls got a snack that was not baked by me.



Things I've Learned
  • I don't have sugar (and Stevia is NOT the same)! 
  • I don't think I will ever get the Stevia taste out of my mouth!!!! This is being said after watermelon, a bagel, chili, corn, and cheese tortillas!
  • My Baking Powder was past its best by date and had never been opened (shows how often I bake). :-/
  • The recipe I used may need more milk or water or something. I couldn't stir it once all the ingredients were in. I added more milk. However, I am not sure how that affected my recipe, since they turned out awful with the Stevia.
  • Cooking is not as time consuming as I always assumed. It took a little longer than muffin mix, but I was still running on time to take Libby to school (if I needed to).
Well wish me and my poor family luck! If my family comes to beg family and friends (or possibly strangers) for food be kind and realize they have me feeding them.

Madison Is 2 Now

So big news... Madison is 2 now! Oh my goodness I can't believe it either. It amazes me how quickly she has grown. She is my last baby, so of course she had to do everything so fast. She held her head up early, rolled over early, crawled early, walked early, talked early(and ALOT), and even learned to use the potty early. She will always be my baby though.

She had her Birthday Party at the beginning of the month. It was a joint party celebrating her friends 3rd Birthday as well. We had so much fun!

I am so incredibly grateful to have her in my life. She is very outgoing and loud, but still has her moments were she just wants to love on mommy. I love you so much my baby Madison!
