Corn Dog Muffins

For lunch today I made these corn dog muffins. I thought they were good, but I am mostly excited to find a great corn bread recipe!
Corn Dog Muffins

Corn Dog Muffin Recipe
  • 1/2 cup melted butter
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1/2 teaspoon baking soda
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 8-10 all-beef hot dogs, cut into 1" bites
    • Preheat oven to 350 degrees. Combine butter and sugar in a bowl then whisk to combine. Add eggs then whisk to incorporate, and then add buttermilk and whisk to incorporate. In a separate bowl, combine baking soda, cornmeal, flour, and salt then stir to combine. Whisk into wet ingredients in two batches. Spray a mini muffin tin very well with non stick cooking spray then spoon 1 Tablesppon batter into each mini muffin cup. Place one hot dog bite into the middle of each cup. Bake for 8-12 minutes or until cornbread is golden brown. Cool in mini muffin tin for 5 minutes before serving. Store leftovers in the refrigerator then re-heat for 20-30 seconds before serving. (I did not have a mini muffin pan, so my muffins turned out bigger.)

Applesauce Muffins

This morning I made these Applesauce Oat Muffins! Yum!

Applesauce Oat Muffins Recipe
  • 1/2 cup all-purpose flour
  • 1/4 cup quick-cooking oats
  • 3 Tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 egg
  • 1/4 cup milk
  • 2 Tablespoons unsweetened applesauce
  • 1 Tablespoon canola oil
    • In a bowl, combine the first 6 ingredients. In another bowl, combine the egg, milk, applesauce, and oil. Stir into dry ingredients just until moistened. Bake at 400 degrees F for 12-15 minutes in greased muffin cups. Cool for 5 minutes before removing from a pan to a wire rack. Serve warm.

Things I've Learned

  • Muffins are mostly a big hit in our house, so I was disappointing that this recipe only made 9 muffins. 

Chicken Bites

Today for lunch I made these Chick-fil-A imitation bites! These were AMAZING!!!! If you try any of the recipes I have done, try this one! Oh wow, such mouth watering deliciousness!

Chick-fil-A Bites





  • 2 large chicken breasts, cut into bite sized pieces
  • 3/4 cup milk
  • 1/4 cup dill pickle juice
  • 1 egg
  • 1 1/4 cup flour
  • 2 Tablespoons powdered sugar
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1/2 cup oil, divided
    • Whisk together egg, milk, and pickle juice and pour into a large ziplock bag or bowl. Add chicken pieces and marinate in the refrigerator for 2-4 hours. Combine flour, powdered sugar, salt, and pepper in a large ziplock bag. Shake to combine. Remove chicken from the marinade and add into the bag. Shake to coat the chicken completely. Heat half the oil in a large skillet over medium-high heat. Test the oil by dropping in a bit of the flour. If it sizzles, the oil is ready, if it pops, lower the temperature a bit. Gently place chicken pieces into the oil with tongs. Do this in 2 batches, as you don't want to overcrowd the pan. Cook the chicken for 3-4 minutes, or until golden brown on one side. Turn the chicken over and allow to cook for 3-4 minutes. Remove to a paper-towel lined plate. Heat the remaining oil and continue with the other half of the chicken pieces. Serve with your favorite dipping sauce. (I'm not a fan of honey mustard, so I didn't make the honey mustard recipe.)











Things I've Learned
  • These taste a lot like chicken nuggets, but again they look different. Therefore, my children didn't even try a bite! I LOVED them though!!!!

Mini Calzones

Today I used this Freezer Pizza Bite Recipe/idea to make a pretty awesome lunch.

Mini Calzones
  • Pizza dough
  • Pizza sauce
  • Your favorite pizza toppings
    • Make your favorite pizza dough! (I made my bread machine pizza dough for convenience.)Roll out very thin. Cut circles in the dough. Put on your favorite sauce and toppings. (I tried to make sure most of the sauce and toppings were right in the middle, so they could be pinched closed.) Fold and then press the dough closed using your finger tips. Place on a pizza stone or baking sheet. Bake at 400 degrees F for 10-11 minutes or until golden brown. 
    • I didn't have the fancy tool they had on the recipe page, so I adjusted the recipe a bit.

Then I just used my fingers to press together.

Riddle me this... my girls like pizza,
but they don't like these... ugh picky toddlers!
I served it up right though!

Things I've Learned

  • I don't have to have the fancy tools to make some pretty delicious meals!!!!
  • My kids are just too ridiculously picky. It is out of control... they love pizza, but they hated these. I think looks of their food does matter to my children. To them new looking means bad or not worth trying. It is pretty frustrating!
