"Perfect" Muffins

This is an interesting muffin recipe. I think it may be a stretch to say they are "perfect", since they are more of a bread than a muffin. My family sure liked them though!

Good, but better with jelly and butter!
Perfect Muffins Recipe

  • 2 cups flour
  • 1/4 cup sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 egg
  • 1 cup milk
  • 1/4 cup butter, melted
    • Preheat oven to 400 degrees F. Spray a standard muffin tin with non-stick cooking spray or place in baking cups. In a medium bowl, combine flour, sugar, baking powder, and salt, and whisk lightly to combine. In a small glass measuring cup, whisk the milk and egg together. Add the milk and egg mixture and then the butter to the dry ingredients. Stir until just combined. The batter will be lumpy. Using a spoon scoop the batter evenly into the muffin tins. Bake for 18 minutes, or until a toothpick inserted into the middle of a muffin comes out clean. (I baked mine for 15 minutes.) Serve warm and enjoy!

Things I've Learned

  • These muffins are more like bread (not very sweet). Which means they are even better with butter and/or jelly.
  • I love cooking with whole wheat white flour. All of the recipes are more dense, but so much more filling.
